Moi moi (Moi-moi, Moin-moin, Moin moin as otherwise called) is a well known, loved and consumed side dish in Nigeria. Traditionally, Nigerian Moi moi is made using a thick mixture (derived by blending any type of peeled beans, onion, peppers and scotch bonnet). This process results to Moi moi, which is protein-rich but lacks vitamin C contained in the beans seed coat, which has been peeled or removed.

Unlike the instant beans powder and peeled beans, this moi moi is prepared by soaking the beans in water until soft without peeling the beans seed coat; blended with pepper, scotch bonnet and onion until smooth; infused with eggs, herbs and seasonings; portioned in oven-safe ramekins dishes; garnished with chunks of boiled mackerel and sliced hard-boiled egg. The shape of the steam-baked moi moi is primarily determined by the shape of the container used in holding your moi moi mixture. A scalene triangle is achieved when leaves are used in the shaping process, a circle is achieved when a round ramekins are used in holding and cooking the mixture.

Moi moi is one of the most popular side dishes in Nigeria, usually served with rice (white rice, jollof rice or fried rice), bread (known as moi moi burger). Moi moi can also be eaten on its own as a snack but mostly served in parties or events (traditional events and dished at special occasions, such as weddings, engagements, naming ceremonies, Christmas Eve, New Year, Easter etc) alongside rice.

Moi moi, among other methods, can be made without the traditional 'peeling of the beans seed coat'. In the video below, we successfully made an authentic Nigerian Moi moi using unconventional method - unpeeled honey (oloyin) beans instead of the traditional peeled beans. Ingredients and what you need:

1 1/2 cups or 315g unpeeled oloyin (honey) beans

2 sweet peppers

1 red bell pepper

2 scotch bonnets

1 medium sized onion

2 tbsps (100ml) coconut oil

1 cup (200ml) fish liquid stock (depending on the thickness of the beans mixture)

1/2 tbsp all purpose seasoning

1 tsp salt

2 Knorr chicken stock cubes

1 tsp curry (optional)

1 tsp mixed herbs (basil, marjoram, parsley & thyme)

A pinch turmeric

2 eggs (optional)

Butter (for coating the Ramekins)

2 Hard boiled eggs (optional)

1 Boiled Fresh Mackerel (fresh/frozen mackerel fish, 1 tsp salt, 2 stock cube, 1 tsp thyme, 100ml water)

10 ramekin dishes
