Hardly will you not see it being served at Nigerian parties and events as starter (small chop or snack) and as usual this goodness is never enough needless to say they go into waste. This West African deep-fried batter snack, is mostly loved by Nigerians and is an inexpensive street food.

I must confess that after frying, I could not resist the desire to have more coconut puff puff - it barely lasted for a few days. Puff puff can be tempting and highly addictive too! Puff puff is served at most Nigeria parties, such as birthday parties, naming ceremonies, wedding receptions, anniversaries and more. Puff puff can be stored for several weeks (up to a month), if properly stored.

Coconut puff puff comprises of two types of ingredients, namely: dry ingredients which are flour; sugar; yeast; salt; nutmeg and desiccated coconut, and the wet ingredients are water, eggs and coconut oil for frying. The dry ingredients are mixed in a bowl until well incorporated, followed by adding the wet ingredients. Mix both dry and wet ingredients until well combined to form a batter. Then place the batter in warm place until it doubles in size. Time to fry - deflate the batter by mixing it and scoop some batter with your hand (or ice cream scoop or a spoon) and place it in the hot oil carefully and allow to deep-fry.
INGREDIENTS (25 PUFF PUFF, SMALL SIZED)
300g plain flour
1 tsp nutmeg
3 tbsp desiccated coconut
Activated yeast (2 tbsp water + 2 tsp dry yeast + 1 tsp sugar)
2/3 cup water
1/3 coconut water
A pinch sea salt
Coconut oil (enough to deep-fry)
