1 Rinse the sorrel flower/leaves with cold water in a colander to get rid of any dirt.
2 Transfer the flower into a pan/pot.
3 Add some ginger root (as must as preferred).
4 Add 1 litre of water.
5 Cover the pan/pot with a lid and cook for 15 minutes.
6 After 15 minute, add: some freshly peeled sweet pineapple chunks, 1 freshly squeeze orange juice and orange peel(s) for zest - optional.
7 Stir gently, cover and simmer for 10 minutes.
8 After 10 minutes, set aside until cool.
9 Once cool, press with a masher to help release as much juice and flavour as possible from the sorrel flower, pineapple and ginger.
10 Strain the mixture with a fine mesh/sieve.
11 It can be enjoyed sweetened or unsweetened.
